What you need for 2-3 persons:

  • 500 gram (1,1 lb) Spaghetti
  • 200 gram (7 oz) field mushrooms
  • 2 zucchini
  • 250 ml (8,5 fl oz) soycream
  • a bunch of fresh parsley
  • 4 cloves of garlic
  • fresh black pepper out of the mill
  • 3 table spoons vegetable oil
  • salt
  • 20 minutes of your time!

  1. At first we heat some water for the Spaghetti.
  2. We give the  water into a big cooking pot.
  3. We add the Spaghetti and one tablespoon salt.
  4. We stir everything so that the Spaghetti don't cleave on each others.
  5. The Spaghetti need to cook 5-8 minutes until they are "al dente"
  6. After that you cast the content of the cooking pot into a colander and flush it shortly with some cold water.
  7. During the cooking of the Spaghetti we can make our sauce.
  8. We wash the zucchinis and the field mushrooms. Afterwards we cut them into filmy slices.
  9. We also wash the parsley and chop it into small pieces.
  10. We heat the vegetable oil in a frying pan and add the zucchini. We fry them for about 2 minutes.
  11. Afterwards we add the field mushrooms and likewise fry them for about 2 minutes together with the zucchini slices.
  12. We add the soycream and let everything boil for about 3 minutes until we add the peeled and smashed cloves of garlic and the parsley.
  13. We stir everything and finally flavor with some salt and fresh black pepper.
  14. Now we mix the Spaghetti together with our vegetable-cream-sauce.
