What you need for 3-4 persons:

  • 1,5 kilogram (3,3 lb) potatoes
  • 8 tomatoes
  • 1 onion
  • 1 clove of garlic
  • black pepper out of the mill
  • 4 tablespoons olive oil
  • 2 tablespoons vinegar
  • 1/2 bunch of parsley
  • 70 minutes of your time!

There is no better thing in summer than a well done potato salad - it should be light, filling and please not to fatty. We'll take streary potatoes, fresh tomatoes, onions, garlic and cold pressed olive oil. And it's really "easy" :)

  1. At first we give the potatoes into a large cooking pot.
  2. We heat some water and add it.
  3. The potatoes need to boil for about 45 minutes. Check it in the meantime.
  4. After 45 minutes we cast the content of the cooking pot into a colander (don't flush it with water!).
  5. In the meantime we wash the tomatoes and cut them into middle-sized pieces.
  6. We peel the onion and cut it into small pieces.
  7. We peel the clove of garlic.
  8. We mix 4 tablespoons olive oil with 2 tablespoons vinegar, add the peeled and smashed cloves of garlic and flavour with salt.
  9. If the potatoes are cooled off we peel them and afterwards cut them into middle-sized pieces.
  10. We wash the parsley and chop it into small pieces.
  11. We mix everything together now and top it with some chopped parsley.
