There is no better thing in summer than a well done potato salad - it
should be light, filling and please not to fatty. We'll take streary potatoes,
fresh tomatoes, onions, garlic and cold pressed olive oil. And it's really
"easy" :)
- At first we give the potatoes into a large cooking pot.
- We heat some water and add it.
- The potatoes need to boil for about 45 minutes. Check it in the meantime.
- After 45 minutes we cast the content of the cooking pot into a colander
(don't flush it with water!).
- In the meantime we wash the tomatoes and cut them into middle-sized
pieces.
- We peel the onion and cut it into small pieces.
- We peel the clove of garlic.
- We mix 4 tablespoons olive oil with 2 tablespoons vinegar, add the
peeled and smashed cloves of garlic and flavour with salt.
- If the potatoes are cooled off we peel them and afterwards cut them
into middle-sized pieces.
- We wash the parsley and chop it into small pieces.
- We mix everything together now and top it with some chopped parsley.
