What you need for 2-3 persons:

  • 200 gram (7 oz) dried chickpeas (if you take them fresh chickpeas out of the can it won't work)
  • 1/2 bunch of parsley
  • 3 cloves of garlic
  • falafel-spice (coriander, cumin, pepper, cinnamon, pimento, cloves, ginger, nutmeg)
  • salt
  • 1 onion
  • 1 salad
  • 2 teaspoons baking powder
  • tahini (sesam mush)
  • 3 cups of vegetable oil
  • 3 tomatoes
  • 1 pita bread
  • 3 cup of water
  • juice of 1/2 citron
  • 30 minutes of your time!

  1. At the day before you soak the chickpeas in water for about 12 hours.
  2. On the next day we wash the parsley and peel the cloves of garlic.
  3. We puree the chickpeas together with the parsley and garlic in a mixer or a meat grinder (better!).
  4. We add 1 cup of water, 3 tablespoons falafel-spice, the baking powder and flavor with salt. Now you should have a well flavoured falafel-dough.
  5. We form small falafel balls or burgers with wet hands.
  6. We heat the vegetable oil and add fry the falafel balls for about 7 minutes on middle-heat.
  7. You take them out of the oil and let them drip off the oil (saves calories).
  8. We peel the cucumber and cut it into filmy slices. So do we do the tomatoes.
  9. We peel the onion and cut it into small slices.
  10. For our sauce we need the tahini, some water, fresh citron sauce and a dash salt: We mix 1 part tahini together with 2-3 parts water and flavour with citron-juice and some salt.
  11. Now you can serve everything together in a fresh and crusty pita-bread.
