What you need for 1-2 persons:

  • 2 eggplants
  • 3 cloves of garlic
  • 3 tablespoons olive oil
  • a little salt
  • a handful fresh basil
  • 55 minutes of your time! (baking time included, don't worry ;-)

  1. We preheat the oven to 250 degree celsius
  2. We stab the eggplants several times with a fork. If we don't they'll explode later ;-)
  3. Now we bake the eggplants about 45 minutes in the oven. In the meantime you can relax.
  4. Afterwards we let them cool down.
  5. We cut them into two halfs and remove the flesh with a tablespoon.
  6. Now we mix the flesh with basil, three tablespoons olive oil and three peeled and smashed cloves of garlic. Afterwards we flavor with some salt.
  7. You can serve the mush together with pitabread and vegetables.
