What you need for 8 cupcakes:

  • 100 gram (3,5 oz) flour
  • 100 Gram (3,5 oz) sugar (best is raw cane sugar ;-)
  • 100 Gram (3,5 oz) margarine
  • 20 Gram (0,7 oz) cacao
  • 1 Teaspoon baking powder
  • 2 tablespoons soyflour
  • 220 ml (7,5 fl oz) soymilk
  • 1 dash salt
  • vegan whip cream as Soyatoo
  • compound cherries

 

  • time to prepare: 10 minutes
  • baking time: bei 180 degrees Celsius  / about 25-30 minutes

Cupcakes are always great and if you make a real nice topping everybody will be astonished. Great for parties! ;-)

  1. At first we preheat the oven to about 180 degree celsius.
  2. We mix the margarine and the sugar in a large bowl for about 2 minutes with a food processor.
  3. Afterwards we add all other ingredients for the dough: cacao, baking powder, soyflour, flour, sugar, dash salt and the soymilk and mix it together until we get a nice dough.
  4. Line a cupcake tin with paper liners.
  5. Fill each cup with batter using an ice-cream scoop with a 1/4-cup capacity; the batter should nearly reach the tops of the cups.
  6. Now we bake them until a cake tester inserted in the center comes out clean, 25 to 30 minutes.
  7. In the meantime we whip the soy cream.
  8. Remove cupcakes from the oven, and allow them to cool briefly in the tin before transferring them to a wire rack to cool completely, about 45 minutes. Now we top them with the whipped soy cream and ad a compound cherry on each cupcake.
