Cupcakes are always great and if you make a real nice topping everybody
will be astonished. Great for parties! ;-)
- At first we preheat the oven to about 180 degree celsius.
- We mix the margarine and the sugar in a large bowl for about 2 minutes
with a food processor.
- Afterwards we add all other ingredients for the dough: cacao, baking
powder, soyflour, flour, sugar, dash salt and the soymilk and mix it
together until we get a nice dough.
- Line a cupcake tin with paper liners.
- Fill each cup with batter using an ice-cream scoop with a 1/4-cup
capacity; the batter should nearly reach the tops of the cups.
- Now we bake them until a cake tester inserted in the center comes
out clean, 25 to 30 minutes.
- In the meantime we whip the soy cream.
- Remove cupcakes from the oven, and allow them to cool briefly in the
tin before transferring them to a wire rack to cool completely, about
45 minutes. Now we top them with the whipped soy cream and ad a compound
cherry on each cupcake.
