This is an easy one too and I sometimes enjoy it for breakfast or as
a snack for in between.
- We mix the flour, the soy flour, the soymilk, the sugar and the dash
salt together with a eggbeater or a food processor. The dough shouldn't
be too thin fluid. If so just add some more flour or soymilk if it's
the opposite case ;-)
- Now we add the blueberries and mix everything together until the dough
changes colour.
- In a frying pan we add some oil and spread it with some kitchen paper.
- We heat our frying pan and if it's hot enough we add some dough and
spread it evenly.
- We fry the pancake on each site for about 3-4 minutes and pile them
up on a plate when they are ready.
- Finally we serve them with some vanilla soy ice cream.
