What you need for 4 people:

  • 3-4 red bell peppers
  • 1 onion
  • 1 carrot
  • 1 litre (2,1 pints) water 
  • 1 vegetable stock cube
  • 1 little piece of fresh ginger
  • black pepper out of the mill
  • hot paprika powder
  • 125 gram (4,4 oz) soy yoghurt
  • a little olive oil
  • salt

 

  • time to prepare: 60 minutes

If you want to chill while cooking take this recipe. It's a great soup. Just let everything cook for about 60 minutes while surfing on the internet and that's everything you need to do! If you like hot food that's your recipe! Believe me! And if you don't - just spare the paprika spice! ;-)

  1. At first we wash the bell pepper and the carrot.
  2. Afterwards we core the bell pepper and cut it in small pieces. We cut the carrot into small pieces too.
  3. We peel the onion and cut into small pieces as well.
  4. Now we heat 3 tablespoons olive oil in a big pot and fry the onions for about 4 minutes while stirring them.
  5. We boil one litre of water in the electric kettle.
  6. Now to the onions we add the bell pepper and the carrots and fry them also for about 4 minutes while still stirring everything.
  7. We peel the ginger and cut it into small pieces. (You should definately take fresh ginger not powder or anything like that - it tastes much better!)
  8. Afterwards we add the hot water, ginger and the vegetable stock cube to our pot and boil everything up.
  9. We cover the pot half and we let everything cook for about 45 minutes on middle heat.
  10. Now we mash everything in a mixer and season with salt, pepper and hot paprika spice.
  11. To improve it we add 125 gram soy yoghurt if available.
